Aura knives are created to last a lifetime or more with proper care. Here are some guidelines on caring for your knife.
Using your Aura knife
Aura knives are designed to perform exceptionally over a wide range of knife skills in the professional or home kitchen, but we do not recommend using the knife for heavy chopping through bones, shells or hard/frozen food products which will eventually dull even Aura’s cryogenically hardened steel.
Washing your knife
Aura knives should be hand-washed and dried with normal dishwashing soap. High performance knives should never be placed in the dishwasher because abrasive dishwasher detergents and possible contact with ceramics and other brittle objects may damage the knife.
Keeping the edge sharp
Aura knives are designed with geometry and high-performance steel to retain their sharpness for a long time. However, all knives will eventually lose their sharpness so it is best to maintain (or "hone") the knife edge regularly.
We recommend using a leather strop for maintaining your knife edge regularly. Just a few strokes along a leather strop will extend the lifetime of your knife edge for a long while. Strops can be purchased inexpensively at knife shops or online (for example, this strop is readily available from Amazon).
We don't recommend using consumer-grade sharpening steels, grinders or ceramic rods. While these implements can help sharpen low- and mid-range knives, they are likely to damage the fine structure and steel of Aura and other high-performance knives.
We recommend professional sharpening for your Aura knife once a year. Professional sharpening helps remove micro-burrs, nicks and edge folding that can occur with even ultra hardened Aura steel, and can recondition your knife blade to smooth and consistent sharpness.
